A Quick Tzatziki

One of my top 3 dips, and delicious with tortilla

chips, harissa roasted meat or vegetables or in a wrap.


Here’s a very quick recipe for tzatziki.


Ingredients:


Natural yoghurt

Clove of garlic

Mint leaves

Half a cucumber

Lemon

Salt & pepper


Method:


  • step into the kitchen !

  • Slice your cucumber in half and scoop out the middle with a little spoon

  • Grate the cucumber into a sieve over a bowl

  • Add a bit of salt ontop of the cucumber and stir

  • Leave to one side

  • Get a nice bowl to serve the tzatziki in, grate a clove of garlic into the bowl

  • Add a few dollops of yoghurt and stir

  • Chop the mint and add to the yoghurt

  • Squeeze in the lemon and taste, ensuring it’s got a nice tang

  • Squeeze out your cucumber, pushing into the sieve. (Note! Keep the cucumber juice from the bowl, it’s pretty yummy over ice and sparkling water with some lemon juice!)

  • Add the grated cucumber to the yoghurt

  • Enjoy!
