A Quick Tzatziki

One of my top 3 dips, and delicious with tortilla
chips, harissa roasted meat or vegetables or in a wrap.
Here’s a very quick recipe for tzatziki.
Ingredients:
Natural yoghurt
Clove of garlic
Mint leaves
Half a cucumber
Lemon
Salt & pepper
Method:
step into the kitchen !
Slice your cucumber in half and scoop out the middle with a little spoon
Grate the cucumber into a sieve over a bowl
Add a bit of salt ontop of the cucumber and stir
Leave to one side
Get a nice bowl to serve the tzatziki in, grate a clove of garlic into the bowl
Add a few dollops of yoghurt and stir
Chop the mint and add to the yoghurt
Squeeze in the lemon and taste, ensuring it’s got a nice tang
Squeeze out your cucumber, pushing into the sieve. (Note! Keep the cucumber juice from the bowl, it’s pretty yummy over ice and sparkling water with some lemon juice!)
Add the grated cucumber to the yoghurt
Enjoy!
